Giggle Brownie!!


 How time flies....  I had started writing this recipe just after the covid pandemic had started to subside. Today we look back and it seems we have forgotten that time. Sometimes I get this feeling - was it for real? 
.....Yes it was - for the entire world was shaken up! And then, here we are - believing firmly  - "This shall too pass....count your blessings one by one!! 

 

Notes from 2021 - 

Finally woh din aaa gaya.....

                                                  Kids got their vacations - n we were already dying to fly away!! Mumbai was bursting with Covid numbers. After our floor, it was almost 7-10 cases per day in our society. This was second wave at its peak!! Flying to Doon at this point seemed like we were characters in some English movie who were escaping the city..... 

 

Well, that was before vacation πŸ˜•…now back in Mumbai almost 2 months have passed with everything looking good. . Second wave came and gone now. Sadly, It took many near and dear ones along with it. People are again settling... Keeping fingers crossed that there is no third wave and no more losses!!
Now it seems past few months just passed with us being busy with so much action. Time spent at mom's house is always very special. Though pandemic made everything so different. Missed our usual visits, family meets and market visits. However the beauty of being in doon is the weather, mountains and greenery - so nature kept us surprising with its thriving vibrancy during this time.

 

We came back as the new session had started for all of us. Back in the kitchen the regular cooking and baking spree continues. When you do it with your own hands in the kitchen ......it is always different - in the sense that you make sure that the entire food is consumed to the final morsel πŸ’ͺ 😝.

 

This recipe is my personal favorite. Prurrrfect for Friday evenings.....whoever baked and named it as Slutty brownies - has been successful in giving it not only a catchy name but also the awesome concoction which you are going to love.

My touch here is the name I chose for these brownies - Giggling Brownies - they appear to be giggling once you slice them. Try it and it will surely make you happy!!

 

Cookie layer - 

 

120 gms All Purpose Flour
120 gms Brown Sugar
100 gms Unsalted Butter
1 Egg
1/2 tsp vanilla Extract
1/2 tsp Kosher Salt
1/4 tsp Baking Powder
Pinch Of Baking Soda 
1/2 cup Chocolate Chips
1/4 cup Oats

 

2 packets vanilla Oreos.



Brownie Layer - 


60 gms All Purpose Flour
60 gms Cocoa Powder
100 gms Brown Sugar
100 gms Granulated Sugar
185 gms Butter Melted
2 tsp Vanilla Extract
1 tsp Coffee Powder
1/2 tsp Kosher Salt
1/2 tsp Baking Powder
2 Eggs
1/2 Cup Chocolate Chips

 

Make the cookie dough –
Beat butter and sugar in a bowl until creamy. Beat in egg and vanilla until combined. In a separate bowl stir flour, salt, baking powder, and baking soda. Gradually add flour mixture to butter mixture. Fold in both chocolates and oats until just combined. Spread dough in an even layer in the bottom of greased baking pan. Set pan aside while making brownie layer. Place the Oreos on top of the cookie dough layer.


Make the brownie layer -
Preheat oven. Mix the cocoa powder, flour, espresso powder, and baking powder in a bowl then set aside. In a medium bowl, beat together melted butter, sugar, eggs, and vanilla. Mix very well as this step gives you that nice brownie top. Sift the dry mixture into the butter mixture, then fold in the chocolate chips. Pour brownie batter over Oreo layer, gently smooth top spatula. Bake at 180° for 40 to 45 minutes. For best slicing results, let it cool completely, about 2 hours.
Store in an airtight container up to 3 days.

Cookie dough is ready...

Spread cookie dough flat in baking pan. For second layer spread Oreo biscuits.
Spread the cookie dough and top it with Oreo layer.

Bake at 180 degrees for 40 to 45 minutes.
There, finally you see the giggle brownie 😁!!
