Bun Buns
Yes, bun buns, as we had started calling my little princess.
Actually her sleep cycle took ages to settle down, ditto with these buns. So, the name struck...π
Well, when I started the "breade-thon" pavs really took time to crack. And I see, that with each batch it keeps getting better and better. So in this awesome weather right now, rains and clouds and so much greenery, its the right time for some Mumbai style vada pavs.
So, today I decided to repeat my baked vada pav session. However after baking half the batch, I thought may be I can fry a few vadas, as pavs are baked anyways π. Finally ended up frying half of the vadas. Obviously it tasted better. So, we had the spread of both, baked and fried - Balance!! Right!!
Well check out this recipe - and you will love it.
Bread Flour - 550 gms
Sugar - 1 tsp
Milk Powder - 2 tsp
Malt powder - 1 tsp
Salt - 1.5 tsp
Yeast - 2.5 tsp
Unsalted butter - 2 tbsp
Lukewarm Milk - 110 ml
Lukewarm Water - 100 ml
Extra Flour - 20 gms
First prepare the yeast. In half the quantity of milk put Malt powder, sugar and Yeast. Keeps aside for 10 minutes.
In a bowl mix flour, salt, milk powder. After 10 minutes, add the yeast milk, water and other part of milk. Mix all of it together. Take butter and knead the dough with it. Here we can use little extra flour if dough is wet. At this stage its just that everything should come together. Leave it for 2 hrs.
After 2 hrs take out the dough and shape it. Keep it in your pan leaving a little space in between. This is for plain pav. For baked vada pav, add potato mix ball in the center of each ball and roll it in to a circle. Now, keep all these shaped pavs in the trey for 20 mintues.
Now, before keeping the trey in the oven, brush milk on the top of pavs. It helps in browning the top well. For baked vada pavs I had put some seeds too. I have become a fan of these seeds as it looks so good on baked things. However, the kiddos at home don't approve of this, sfor them it is without seeds, n normal pavs!!
Once out, keep them for around 15-20 to cool down. And then they are ready to have....
If , you have make filling, then do like this and make a round shape to close it.
