Pav Rocks!!





                     Weather is turning really hot now. Days are sultry and hot hot, sometimes it feels AC is not working with full efficiency!!

                Working with full efficiency!! Point to ponder!! What is working with full efficiency? At this time, with corona Kaal going, anyone who is stepping out to work - full consideration and relaxation should be given to them. Doctors, policemen, community workers, essential services workers - everyone should be given full credit and acknowledgement for the work they have done during these distressful months. 

             So, next time if you come across anyone out of these, instead of accusing and pointing fingers, just acknowledge their contribution. We have a choice to sit at home - all we have to do is to follow few simple rules. They are The warriors, who stood out there for us!! So, let's be thankful to them!!

            Now, finally looks like the vaccine will bring some change in situation. However, there seems no end of it in my dream city - Mumbai! With numbers spiking, talk of another state level lock down going on and many restrictions imposed again. Looks like the vaccine effect has not yet started πŸ’ͺ.

            And so comes my next magic recipe. Being in this part of the country this dish has been a hot favorite - home made or ordered from outside. During my lockdown bakethon this was one of the first experiments I tried and came out quite well. So, here to the spirits of Mumbai - My version of baked Vada Pavs!!


For Pav : (Which will rock later πŸ˜†!)

450 gms APF (All Purpose Flour)

10 gms Milk powder

2 tsp Sugar

1/2 tsp Salt

7 gms Yeast

1.5 cups Lukewarm milk

2 tbsp Butter


        I love πŸ’“ working with this dough. As the saying goes that baking is love made edible, this is actually love made edible πŸ’–.  So, first make your yeast mixture by mixing it with milk and sugar. After 5 minutes, once it is puffed put it in the APF, Milk powder and salt mixture. In the last step add the room temperature butter and knead for 2 minutes. It may be little sticky but manageable. Keep in a glass bowl for proofing. This may take around 2 hours. 

        So, we can dish out Vadas in the mean time. 

For Vada : ( to go with rocking pavs πŸ’)

3 cups mashed boiled potatoes

5 Green chillies chopped finely

3 tbsp Garlic minced

4 tsp Ginger minced

2 tsp Mustard seeds

1/2 tsp Asafoetida

10-20 Curry leaves

1 tsp Turmeric powder

Salt to taste

2 tbsp Oil

4 tbsp Coriander leaves cut finely


                 In a thick bottomed pan put oil, mustard seeds, curry leaves and let them crackle for 2 minutes. Now add garlic, ginger, green chillies and let it brown completely on slow flame. Add turmeric and switch off gas. Add potatoes and salt and mix well. Let it cool completely.

               After cooling add coriander and mix well. Now make balls with this mixture. Slightly bigger then tennis balls. Once made keep them in fridge for cooling.

               Let's come back to our Rocking pav's dough 😍. After 2 hours it will be double in size, extremely soft, amazing texture and very well behaved. You can go on and on kneading it and convert it into any shape!! But today, here this one is for rocking pavs. Now divide the dough into 15 equal parts.

             So, the potato balls waiting in the fridge can com out now at this stage. Start rolling each potato ball into the dough one by one. Make a dough ball with each portion and then spread it a bit. Now put the potato ball in the middle and close it from all sides. Once all the balls are made, arrange them in the baking pan leaving little space in-between. 

              Once all the balls are arranged, keep them for second proofing, for about half an hour. Its awesome to see how they increase in size and fill up the left over space. It's time to bake it now. Keep the tray for baking at 180 for 30-40 min. Take out from the oven and brush it with some butter. Keep it covered for 10 minutes ........and.....

             Finally, The Pav Rocks ready to rock and roll!! Sprinkle the coconut chutney.
