Guji Guji Pie!!

                                      There is a long time before we can actually start behaving normal. I mean - no mask days are very far off. Today I took appointment at a hospital for a general dental check up and the instructions were - carry mask, sanitizer, only 1 person allowed...., blah blah blah!! So, this is happening when that side is all vaccinated. Yes, we on this side - it’s for us!! Or are we still not sure of the vaccine. πŸ˜…

                                     I started writing this 20 days back!! How time passes....phew!! Today we are on a absolutely different phase - scarier one!! Confirming more confinement days πŸ˜“πŸ€πŸ˜·.  Numbers in Maharashtra going up on daily Basis. The senior citizens almost vaccinated now ....but Mumbai is beyond everything! Second wave 🌊! Really! It’s going to be tough for all of us to sustain, if this goes out of hands again 😷  - so keep the mask ON!! 

                                   Haven’t been into the kitchen for baking for almost a week now - no recipes exciting enough. I have been looking around for something new to get the zing back and ended up with Holi's baked gujiyas. A friend suggested to try baked gujiyas....loved the idea and off I went into the frenzy of planning and arranging things. 

                        🀐 No they were not awesome πŸ˜†. After doing the whole parade I realized  - nothing beats the fried ones!! Also when it is made just once in a year then why not indulge.  Toh πŸ˜… Ye hai hamari sehat ka raaaj!! 

                                Well jokes apart, if you are serious about your diet - then you should give this baked one a try.....It tastes good - but my personal preference goes for the fried ones!!

                                Aaaand then the pinch of food crush took over and I thought of baking - Guji Guji Pie πŸ˜‹!!

                              Saves so much of your energy of making so many gujiyas, apart from the fact that this one is essentially baked version. Haven't tried deep frying a pie - though I have that on my list😈!! 

                  I kept the pie dough as Gujiyas original dough. 


Ingredients - 


Gujiya Dough  - 

All purpose Flour (Maida) - 260 gms

Ghee - 3 tbsp

Salt - pinch

Water - just enough to bind the dough.

 

Filling

Khoya  - 1 cup (I made at home by reducing 2 litres milk into solid mava.)

Sugar - 1 cup

Cardamom powder - 1 tsp

Dry grated Coconut - 4 tbsp 

Chironji - 4 tbsp

Almonds - 1 tbsp finely chopped

Raisins - 1 tbsp

Cashew nuts - 1 tbsp finely chopped

For Dough first mix APF salt n ghee together. Knead it using as little water as you can. Make it into a soft dough. Keep it aside for half an hour. This dough would be enough for 2-3 pie shells and gujiyas as many as you want.  πŸ˜œ

For filling, if you are making khoya at home - make it and keep it ready a day before. Now in a pan put 1 spoon ghee. When it become hot, put khoya and cook it for 3-4 minutes. Switch off the the gas and let it cool completely.  

Once khoya is cooled down, add all the dry fruits, cardamom and sugar. Mix everything well and Adjust sugar as per your taste. 

Now roll the dough into a thin round shape. Set it up in the pie mould  to make your pie shell. Bake for 5 min at 180. 

Cool it for 15 minutes and then fill it up with khoya masala. Make the pie topping - whatever design you want. I have put the flower cut outs. 

Bake it for 20 minutes - at 180. Take out and cool it for 30 minutes. Sprinkle shredded almonds n kesar on the top!! 

There!!  All set.....Your show stopper this Holi!!
