Strawberry Mascarpone tart recipe
Amongst many other things people learnt during this lock down - is introspection! ππ. I think that was the best thing to learn. It made everyone a lot calmer and non judgemental about many issues we face on day to day basis. Biggest example being the house help not cleaning things properly on a regular basis π¬. Then I observed with no help when I started doing it, my best move was, making short cuts 3rd day onwards....π.
So, just going to and fro with these thoughts, I thought about our moms generation who had just stepped out to work. Everything was under their forte - their new portfolio - a job, and expected portfolio - children plus household work! There was no option of outsourcing much, and surprisingly no complaints too!!
And, here we are, the privileged ones!!
Well, with these threads I stepped into the kitchen...and today whipped up the amazing strawberry pie!
Amazing! Yes!! anything and everything with fresh fruits would be super awesome. One can boast about it unabashedly ....believe me the fresh fruits will take care of it!! π
The Tart Crust
325 grams - All-purpose flour
1 teaspoon kosher salt
1 tablespoon - sugar, optional
230 grams - very cold unsalted butter, cut into 1/2-inch
cubes
2 to 4 - tablespoons ice water
Add flour sugar and salt. Mix it in a bowl. Keep adding butter and
mixing it.
Dough should look broken up and a little crumbly.
Now add ice
cold water. 2 spoons. Keep mixing. The crumbs should begin to form larger
clusters. If you pinch some of the dough and it holds together, it’s ready.
Take the dough and roll it. Fix it in the pie/tart tray. Prick the bottom and freeze for 20 minutes. Now put the parchment paper
in the bottom with weight (grains on it like rice). Bake it for 15 minutes.
Take it out and remove weight n parchment paper. Bake it for 20 more minutes on
180.
Strawberry Mascarpone tart recipe
454 gms strawberries
¼ cup sugar granulated
1 tbsp lemon juice
150 gms mascarpone cheese
20 gms Cream Cheese
¼ tsp vanilla
2 tbsp n 2 tsp powdered sugar
½ tbsp balsamic vinegar )
1. Mix strawberries n granulated sugar gently. Keep for ½ an hr.
2. Mix mascarpone cheese, confectioners sugar, balsamic vinegar and vanilla in a bowl and refrigerate.
3. After 30 minutes of strawberry in sugar, take out the liquid
in another bowl. Put it in a saucepan add Lemon juice and bring to boil.
Boil until it becomes syrupy. Remove and cool.
Assemble tart – Spread mascarpone mixture and cream cheese on the tart shell. Arrange the strawberries on the top. Drizzle the glaze on the top...
The devilishly yummy tart is ready bursting with sweet n sour flavours!
