Rum Cake






Valentine’s Day is here, I mean was here.... just today! Wanted to splurge into a whole variety of bakes!! Managed some of it. After all the whole baking thing is time consuming - so if u are not smitten by the baking bug it’s going to be a hell of a task for you!! πŸ˜…

For me it works as therapy. I don’t keep the time count as I enjoy it. Few of my friends have taken into the baking fun after all the recipes I shared. Each one has done excellent, may be better, but then it stops there. After a recipe or two - even if came out excellent - there is no spree. It stops there. So, I guess for me it’s the bug 😍😍!! 

For V Day I had planned on Rum cake, inspired by my lovely super talented sishters Christmas rum cake.  Fruits and dry fruits were soaked on Christmas Day 😈. What I loved about the cake was it had very little all purpose flour. So the cake was all rum n fruits 😍. 

To complete the platter I added some almond cookies and garlic Parmesan bread twirls too! Cake was not meant for kiddos πŸ€ͺ so cookies worked for them :-) 


Rum Soaked Cake 

580 gms dry fruits (Mixed dry fruits and dry fresh fruits)

100 ml dark rum 


Soak all these in rum - I soaked them for nearly 2 months, but for a quick one at least soak overnight.


90 gms All purpose Flour

¼ tsp baking soda

½ tsp Cinnamon

Pinch of nutmeg

½ tsp salt

55 gms unsalted butter

80 gms sugar brown

5 large eggs

50 gms chocolate chips optional


Mix all dry ingredients first and keep aside.

Now mix butter and sugar together till its fluffy. Add one egg at a time. Once all 5 are mixed and they all are mixed completely start adding the APL mixture little by little.

After the whole APF mixture is mixed start folding the soaked nuts in the batter. If there is rum left over with the nuts, mix that too. Fold all the soaked fruits in the batter and finally sprinkle the chocolate chips on the top. 

Keep it in the baking tray for baking at 180 for 40 - 45 minutes. 



Once the cake comes out, you need  to keep it for cooling. At this stage the rum taste would be too sharp and strong. Let it settle down. This would taste best after at least 6-8 hours.
