Passion Tray!!
Well this is a simple quiche recipe! But you see, not only it is difficult to pronounce, as it’s a French word - also it doesn’t make sense ๐. I love to call it passion Tray. Once you make it - you will see it’s a complete meal - and if you have assembled it with love and passion - it becomes your passion Tray.
Yes, baking is not easy - all the accurate measurements you have to do with precision n crack the eggs ensuring shells don’t fall in there ๐!! Well jokes apart its an amazing journey. I used to believe in the fact - cook by your instincts saying aabra ka daaabra.....and suddenly discovered what an amazing thing precision is!!
Very recently, while I was on one of my over zealous baking rounds, my son told me why don't you do something original? None of these recipes are yours....that made me think that there is no way you can impress your brood. For me, if its on my table, its original ๐. With that thought I made the Quiche into a passion tray ๐ - outright reject from my kids. But then there are always a set of noble people around you who will come for your rescue!! Consider yourself blessed ๐ if you have that set of people around you!!
My Passion Tray (Call it Quiche if you want to make it sound oooomph)
Bechamel Sauce - How to make it: I loved this recipe as I found that APF can be replaced with wheat flour, and it tastes great. In fact I tried it for pastas too, and my house mates didn't realize the change ๐ช.
3 tbsp of Whole Wheat Flour
1-1/2 cups Milk
1/4 cup Cream Cheese
Salt to taste
1 teaspoon Whole Black Peppercorns , crushed
1 pinch Nutmeg
Mix everything in a pan leaving cheese out. Cook this mix for 15 minutes, stirring constantly. Once the wheat flour and milk mixtures starts becoming thick add cream cheese and mix it well. Cook for another 5 minutes and leave it for cooling.

Now we need -
Pie Dough
Arrange the pie dough in the pie pan and keep in fridge for around 30 minutes. Now take it out and put it for baking for around 20 minutes. This will bake the crust shell partially. After taking it out, put it for cooling.
For Filling -
1 cup Bรฉchamel Sauce
2 cloves Garlic minced
1 cup boiled Kidney beans
1 onion chopped lengthwise
1 Red Bell pepper chopped
2 tbsp spring onions
5-6 Cherry tomatoes
1/4th tsp Nutmeg
1 tsp Red Chilli flakes
1/2 cup Cheddar cheese grated
2 tbsp Parmesan cheese grated
2 tbsp parsley leaves
1 tbsp Extra Virgin Olive Oil
In a pan put oil, garlic, onion and sautรฉ till it browns. Now put all Kidney beans, bell pepper, Cherry tomatoes, nutmeg, chilly flakes, salt to taste and mix well. Keep it for cooling for 15 minutes.
To assemble The passion Tray Finally - ๐
Take the cooled pie crust tray -
First pour the Bรฉchamel sauce and spread across the pie. Now add the Kidney beans mix all over it. Top it with some of the parsley leaves and spring onions. Put all the Cheddar cheese on it and spread evenly. Top it up with the grated parmesan cheese - spread evenly.....and finally add all the left over parsley leaves!!
There - it's assembled....๐no not for eating!! goes right into the oven for another half an hour at 180.
And then what comes out is called the Passion Tray!!
