Rainbow Sisterhood!! π
Though his instructions were clear, he wanted the outside cake - still I included this as an activity π. And yes, mommy instincts are always ......right π. They loved the acitivity -And the cake was a delight!!
During our times, birthday parties were so simple. Few friends coming home - Cake, toffees, Wafers!! Done. If you wanted to make it lavish add 1 samosa to the plate π€£. That’s it!! And so much fun we used to have.
Times changed - and the plate got loaded with smileys, pizzas, pastas, cheese balls, cutlets and many other things. Then further down the time, venue got changed. We took it from home to some lavish outside venue. Food got more specialized. In all this transition phase I think we forgot the most important element - Fun.
And now we are back to where we had started π€£ - basic simple things and super fun. So, making this cake with my daughter, last night was amazing. Morning time we gave final touch to it and it was ready.
So, with this recipe you will know to make your own π rainbow!!!
Well, I tried this for the first time - but all the tips I got from my lovely sisters really made it easy for me to make it.
Vanilla colour sponge cake + butter cream frosting + white ganache
Vanilla Colour Sponge cake
370 gms - Cake flour
300 gms - Granulated sugar
3 tsp - Baking powder
Pinch of - Baking Soda
1/2 teaspoon - Salt
280 gms - Unsalted Butter ( room Temperature)
4 tbsp - Olive Oil
1 tbsp - Vanilla extract
280 gms - Milk ( Room Temperature)
3 - Eggs ( Room Temperature)
We will need the Gel based colours ( of your choice) to add to batter. Here I used Gel based icing colours.
Mix all dry ingredients. Keep aside.
Now mix butter sugar using hand blender. Add oil eggs and vanilla extract. Mix well. Now add the milk and mix well.
Now start adding the flour mixture little by little. Once it is done use a spatula to fold it together. For colouring the sponge cake put batter in separate bowls. Add just a small drop of colour and mix with batter.
For setting take the baking dish and first our the plain batter. Pour coloured batter on the top of it one by one. Just leave it like that. Put it baking baking. 45 minutes on 180.

After baking the colour sponge cake
Now keep it for cooling. Once it comes on room temprature, keep it inside fridge.
In the mean time make butter cream.
Butter cream
500 gms - Icing Sugar
250 gms - Unsalted butter ( Room Temperature)
1 tsp - Vanilla extract
Mix these all using a hand blender. Mix them till it all becomes a smooth paste. Now keep it aside. Now take out the cake out of fridge. It should be cool and firm by now.
Apply the butter cream all over the cake using a spatula. Once done, keep it back in Fridge.
White Ganache
White Chocolate - 800 gms ( small pieces room temprature)
Heavy Cream - 400 gms
Heat the chocolate in the microwave for 1 minute to make it soft. Heat the cream in a pan, but don’t boil it. Once it is hot, add the soft chocolate and let it melt in cream. Now mix it properly with blender.
So, that’s white ganache ready. Now put distribute 5 tbsp ganache in different bowls. However many colours you have. Add a drop of each colour to the white ganache. Mix it well.
Now comes the most exciting part π. Take the cake out from the fridge keep it on the wired rack. Now pour all the coloured ganache on it one by one. Leave it for 10 minutes as it will flow in all directions slowly. Excess coloured ganache can be collected below the rack, for your later use.
After 10 minutes, the beautiful colour burst will be all set to go back to fridge π. Leave it there for 10 minutes and all set to dazzzle!!!
