Lemon Lemony pie

                       






             So, there it goes - The Mumbai winters!! 😏 Before we could enjoy the glory of wintry mornings its already bright sunny and hot!! 

                         December to February is special for us for the winters and used to be so as my in laws used to be here visiting us. 😎With them around, it was festival time for us. Like my mommy, during her visits my mil had become the partner for me in all the kinds of crazy stuff I kept planning. 

                         πŸ˜…Even with her pensive, diligent, less talking mode, she always managed to express  her love and affection in various ways. When I took my baby steps towards my kind of things, I was amazed how willingly she participated, supported, and enjoyed everything I did.  

                           Amongst many other things, I surely miss the part where even when she would talk less, each time she would come out in my support if anything backfired in my series of non stop planning.  So, if there was one thing I could change, it was her contribution to our talks. But isn't that asking for too much, as she was a wonderful listener! 
                    
                         Of all the things during this lockdown cooking series, this lemon pie would have been her favorite. So, here this one is dedicated to the one adorable bright ray we lost.....Dear mom!!

Lemon Lemony Pie 

Crust
135 gms - Sugar Crackers
60 gms - macadamia nuts or Almonds (I have tired both and they taste equally good!)
70 gms - Unsalted butter room temperature

Filling 
120 ml - Lemon juice
410 ml - Condensed Milk
2 - egg yolks

Topping 
4 tbsp - Cream Cheese
4 tbsp - Icing Sugar (optional - if you don't want the sweet touch then skip the icing sugar) 
1/2 tsp - Vanilla extract
2 - Lemon Wedges

            Mix the crust ingredients in the mixer and put it in the pie tray. Keep it for baking – 180 for 8 min.

            Mix the filling ingredients together n fill it up in the cooled pie shell. Bake it 20 minutes on 180. Once it is done keep it at room temperature for cooling. After 30 minutes, keep it in the fridge for chilling.

          Mix cream cheese, icing sugar and vanilla extract till its fluffy. Garnish with cream cheese mix and lemon wedges just before serving. Serve it Chilled 😈.
