           Mumbai and Winters!! Yes the winter is here....πŸ˜…

                   For the first time in many years, this winter there's no fan from last 2 days! And today I was surprised seeing myself walking around in the house with my pair of socks on πŸ˜†. 

                   Well, now totally gripped in my cooking baking spree, I still find the "soul" food is something which is cooked by someone else....😜. Just had a serving of Yam Kababs made by a friend and they were simply super delicious! I think we should all go back to the roots - start the barter system for at least cooked food. Winters is the right time to hog all kinds of food - and here we get a small window of this weather!! That's a foodie talking...πŸ˜…

                   I have so many things on my list which I have not even touched, and yet whatever I have already done, I have not been able to track. Recently I came across the star bread loved it so much that thought of trying it. So, this is what I ended up with. Not bad!

              In fact I can call it one of the very few successful bakes up my sleeve now,  as my older approved of it ....πŸ’ͺπŸ˜„

                      For this bread you can make your own filling. It's your choice how much you can get creative. I read a few recipes, and tried with Za'tar filling and it was simply awesome. Then tried pesto filling that one was amazing. Then on the tried and tested recommendation explored the cinnamon and sugar filling and 🀩 Wow!! That completely changed the game. πŸ˜„

                    Cinnamon and sugar flavour, once the bread was out, was completely mind blowing. The entire plate got finished in a ziffy ....and the best part my daughter ate it!! πŸ˜† 

Haaaa....here's three cheers to me to me!!  hoping - one day my children will quote - My mom used to cook food which...😈

Ingredients - 

2 tsp - Yeast

3 Tbsp - brown granulated sugar

180ml -  milk

60g - unsalted butter, softened

1 -  Egg

250 gms  - All-purpose flour plus more as needed while kneading. 

1 tsp - salt


Filling - 


3 tbsp - Butter (Spread 1 tbsp of very soft unsalted butter onto each of the 3 circles.)

50 gms - Brown granulated sugar 

1/2 tsp - Ground cinnamon.


                     Make the yeast paste ans set aside for 10 min. Now take flour and mix salt in it. Add egg and butter and mix it. Now add yeast and milk and knead it all into a soft dough. If it’s too sticky add little more flour. Now keep it for 2 hrs. Once it’s doubled in size, knead it a bit and divide into 4 parts.      


                 Make 4 dough balls. Roll each one into a big round shape. Spread butter on first one, sprinkle sugar cinnamon mixture all over n cover with second big round. Repeat same for the next two. Finally adjust the whole circle and press it gently all over. 


              For shaping the bread, make a circle mark ⭕️ in the middle using the smallest bowl you can find in your kitchen. Make 16 cuts from that middle circle as in you are making flower petals.

Look at the pictures below and follow the same steps...


Roll the round circle and spread butter first. Then sprinkle sugar cinnamon.
Repeat same with all four circles and make a shape like this.

Start making cuts from the middle as shown - to make 16 parts.





Now this part is interesting. Hold 2 of them twist outwards and join at the ends. Leave it for proofing for an hour. 


Now once the final proofing is done, brush it with milk on the top and put it for baking. bake it on 180 for 30 minutes.


What comes out after the oven is completely divine. I loved the Pesto and Zaatar versions too but somehow this filling way too good!!
