Cheezy mini loaves

          Is there any easier way to learn that one day we are going to go back to normal lifestyle 😜. 

Yes, that sounds like ages ago now. 

                In the meantime, today our society decided to lift the ban on the final “ not allowed” things. So, today when vendors were allowed to go door to door instead of dropping things off in the lobby, suddenly the floor looked like a market. With 8 flats on a floor - everyone had multiple deliveries - so non stop bells ringing ....and everything looks like has come back to life. 

After this, the only phase left now is kiddos school. That looks far off for now. 

So, here I am, still confused - about safety issues. Tons of sanitizers n masks have gone down the drain ....how much more do we need. Or like everyone is saying, make it your lifestyle now. 😬!

And like the saying goes, amongst this chaos, life keeps moving on!! 

I was telling my mom - you must have raised kids, but we are raising them during corona times, so a big round of applause πŸ‘ for us πŸ˜œπŸ‘Έ! 

And back to the latest in my kitchen stories are these super soft mini loaves.


Ingredients

  • Warm milk - 250 ml 
  • Sugar - 1 teaspoon
  • Yeast - 1 teaspoon
  • Oil/butter - 30 ml
  • Sea Salt - 1/2 Tablespoon
  • All purpose flour - 250 gms

  • Garnishing 
  • Olive oil - 2 tablespoons 
  • Cheese - 4 table spoon ( Grated) 
  • Fresh herbs - 4 table spoon (of your choice - chopped finely )
  • Garlic - 6 pods ( chopped finely) 
  • Salt and chilly flakes as per taste. 
         Knead the first six flour ingredients together. Make the dough into one big ball and keep for raising. That will take around 2 hours. 
      
         In the mean time heat the olive oil in a pan. Put garlic into it and wait till it becomes brown. Now close the gas and add herbs, chilli flakes, salt and leave it for cooling. 

          After 2 hrs, take out  the dough on a clean platform. Some kneading is required at this stage to make the dough soft. It will be soft and springing back if you press it with your finger. After kneading it should not be sticky at all. If you feel your dough is sticking too much to your hands, then adjust it with little dry floor. Use very little dry flour - too much of dry floor will make the bread dry. Once it is adjusted divide it into 8 equal portions. Make a round with each portion and roll it out to make the shape of a square paratha. 

          Now after making square shape just press it gently and start keeping the shapes in the baking pan. In the pan leave them for half an hour at room temperature. 

            After half an hour, they will be ready to go in the oven. So take the herb and garlic infused oil and drizzle little little over all the dough squares. Spread some grated cheese on the top. Now keep it in oven for baking. 25 minutes on 180/ increase the time if you want more browning.

Once out of the oven  keep them for cooling for 10 minutes. These bread loaves are so soft and yum, you don't need anything else with them when they are piping hot!! Just enjoy the herbs and garlic flavour!!
