Was keeping a little busy. With the monstrous situation outside, baffling us every now and then - I am slightly confused. However my relaxed cooking and baking keeps me going and happy. I had planned a lavish cake for my daughters birthday which was on 28th November. But then seeing how they both freak out on the market bought cake I dropped the idea....π. Made a simple vanilla cake and ordered some chocolate cake. Cooked loads of non veg stuff that she loves.
Are we going to get this kind of family quality time again....that I don't know - but I am trying to make best out of it!! π
So one side we all are fighting covid battle, on the other side going out and spending times with your people is not only a breather - but also teaching us the importance of staying connected. Praying for everyone’s healthy n happy Dec 2020...☺️
Recently tried this recipe - some variation in risotto. Try it - if you love aubergine/eggplants.
Jasmine rice - 150 gms
Water - 2 cups (adjust it accordingly)
Aubergine/Eggplants - 1 diced
Muhroom - 7-8 cut into slices
Small Spinach - 1 bunch
Onion - 1
Garlic - 8-10, minced
Parmesan cheese - 4 tbsp, grated
Olive Oil - 4 tbsp
Vinegar - 2 tbsp
Pepper, Cayenne pepper, Sea salt
Parsley for garninsing
Boil rice water with vinegar, little salt and 1tbsp olive oil. Once cooked keep it aside. You can adjust water as per your taste, I make it a little dry. It can be made little wet and sticky, as per the original recipe.
Now take a pan put 1 tbsp olive oil in. Put Onions and sautΓ© them for little while. Add shredded spinach and cook it for 10 mintues. Keep this aside in a bowl.
Now put minced garlic in the pan and let it brown. Add mushrooms to it. Add cayenne pepper and salt as per taste. cook it for 10 mintues. Once it leaves water add close the gas and keep this aside. Now divide the cooked rice into 2 parts. Mix one part with sautΓ©ed mushrooms and other with spinach onions.
Take a bowl and put this rice one by one in layers.
Now arrange the rice layers. Mushroom and spinach mixed rice one after the other. Top it with aubergine chunks. Sprinkle some parsley n cheese!!
Ready to have!!
