The jumbho....goooey!!

Actually it was the lazy crazy mom, who thought how about a jumbho πŸ’ͺ goooey batch of chocolate .....😁. With exams finishing it would need less work - the cake would take care of the in between hunger pangs of munchkins I happily look after...

This at times takes me back to my summer vacations as a child. My mom side was a big family!! I have very lovely memories of my nani - no, not telling us stories or sitting knitting at one place. For the entire one month of vacations we used to spend there - she used to be seen gliding through kitchen to rooms to veranda.....like a superwomen!!

Yes, I realize it now - making sure that entire house is clean and full family of some (20 approx) are all well fed entire day was her simple job ....phew!! And what amazing lip smacking food she used to cook!! (And here I am today, just 4 months down the line, dreading thinking about - again cleaning, and cooking, and clothes, and ....blah blah blah ....from where to start!! πŸ˜…πŸ˜•) 

I remember, she used to cook a huge batch of gajarhalwa for all of us. It would take entire night to cook on "angithi". Mausi maha milan used to continue till late night - all sisters talking. Morning time after breakfast we all used to get a bowl of that super awesome halwa.....
....and pufffffff....within seconds it's gone!! poinde!! chole gaiche!! khatam!! And so we craved more, and we had to wait more ....for the next lot....may be next vacations!! But it used to be fun waiting for those goodies πŸ˜‹.

So, back to this large size batch - told you - lazy instincts - just for two of them. Yes, that's correct...two of them. The other two - thats me n my better half. He gets panic attacks seeing my  jumbo batches..... 
And I love eating whatever is left by my kids- you see the adorable motherly instincts πŸ˜„.  So, its sweet and salty going together 😜.

Well, no prize for guessing it was jumbo chocolate cake - just thought of making distant cousin of black forest with it. Turned out well. Anyone who has good artistic hand can do this one well. I don't have, so it came out okie dokie look wise. Taste wise I think, more whipped cream could have been used. Anyways I have put this into my healthy bakes category...πŸ˜‚ 

All purpose Flour - 220 gms
Baking Soda - 2 tsp
Baking powder- 1 tsp
Salt - 1/2 tsp
Cocoa powder - 65 gms
Granulated brown sugar - 350 gms
White butter - 120 gms
Eggs - 2
Sour Cream - 180 gms
Butter Milk- 120 ml
Hot water - 120 ml

Cherries - canned ones.


Whipped Cream - 250 ml
Castor Sugar - 20 gms

Chocolate Ganache


Mix all dry things in a big bowl - sieve it together 2-3 times and keep aside.
Using a hand blender, mix all wet things except hot water. Now put dry ingredients in mixed wet ingredients and mix all together. In final step, pour hot water and mix well. This will be a runny dough. Put it in a cake pan and bake for 40-45 minutes at 180.

Once it is done, let it cool for 1/2 an hour or so. Now slowly, split cake into 2 parts using a big knife. 
In the middle part put some seedless cherries and spread some whipped cream. Cover it up with the top part of cake and spread chocolate ganache. Now on the top you can decorate it the way you want... I had put cherries.

Suggestion : As a variation on the top you can put the whipped cream again and load it with cherries!!


Cake came out quite okay. Kids have been hogging it for the entire week and long weekend - 6 days 😁!!
