Exotic Bread
Today morning when I woke up .....around 5 am ....it was raining heavily π.
Sliced exotic bread....
My immediate reaction was ....yipeeeeee!! it's going to be a rainy day!! That means holiday ...hehehe!!
Then within a few minutes, came the realization - ONLINE!! hai sabkuch!! No travel, no chutti!!
Well, unless its rainy day and the connectivity goes for a toss π.
Far from those dreams, finally everyone logged in and worked....looking outside and enjoying the view of beautiful rains.
So, after my work was finished I thought of making some nice cheese bread. I have been trying various combinations of breads, and have come to the conclusion that home baked breads comes out best if we use milk or butter milk in it. And this one - I call it exotic bread, is simply divineπ!!
All purpose flour - 400 gms
Minced Garlic browned in Olive oil - 1 tbsp
Sea Salt - 1/2 tsp
Cayenne pepper - 1 tsp
Milk Powder - 1 tsp
Egg - 1
Unsalted butter - 75 gms
Granulated sugar - 25 gms
Yeast - 2.5 tsp
Warm Butter Milk - 200 ml
Grated Cheese - 100 gms
Pickled Jalapenos slices - 20 gms
Pickled gherkins sliced - 10 gms (for these, you can use any of your own combination)
Mixed Herbs - 1 tsp
Garlic olive oil - 20 ml (left from the garlic browned)
Prepare Yeast - Warm butter milk sugar and yeast together and leave for 10 minutes.
In the mean time mix flour with sea salt, cayenne pepper, milk powder, minced garlic. Keep aside. Mix egg and butter together. Now take the flour bowl and add egg mix and yeast mix. Knead the dough. Its going to be wet and messy. Usually I mix everything using a big spoon, and just when all of it is mixed, but there is no shape, I keep it away for proofing. Wait for two hours. Now when you take out your dough it will be easy to knead and manageable. If its too sticky, you can put little dry flour to adjust.
After 2 hrs, it will be double the size, knead it nicely for about 10 minutes. It will be very soft but not sticky now. Roll it into the shape you want. I rolled it into a square shape - now again keep it for 20 minutes for more proofing.
After 20 minutes, make some small slits on the top. Arrange the canned vegetable on the top. Drizzle olive oil mixed with herbs through the slits and on the top all over using a spoon. Whatever is left can be poured over the bread. Finally spread the grated cheese on the top.
Pan is ready to go in the oven. So, now put it inside for 40 minutes at 180. And the exotic cheesy loaf is ready to be hogged!! Tastes awesome when it is fresh and hot from oven!!
