Ri - soooo - ttttooooo!!



Now this one is an interesting story!!

Ri-sooooooo-ttttooo!! Well, when I had it at a restaurant, for the first time, long long back - I kept wondering.....it was very much like plain mushroom cheese rice....made sticky and bland....for chotu bacchus at home!! 😁

Over the years, the taste developed, and I tried making various variations of it. And don't laugh - my “at home risotto” was made with basmati rice!! πŸ˜ˆπŸ˜ˆπŸ˜‚

Finally, thanks to this lock down, through a friend I happened to be in a group which was delivering arborio and jasmine rice. After a lot of thinking and googling, I went ahead with Jasmine rice.

And I must tell you the results were super awesome!!

Over the weekend, it was all Ri-sooooooo-tttooooo and fried rice and rice with stir fry!! Hmmm yummmm combination.  If you have not tried it yet, please go ahead and try.

The best part of cooking anything at home, is that you know what’s going inside!! So, I made the recipe little Indianised πŸ˜„. 

Nothing to follow here actually. Try getting your share of jasmine or arborio rice and create your own  magic!! 

Rice - 1 cup
Vegetable stock/water  - 3 cups 
Olive oil - 1/2 tbsp
Vinegar - 1/2 tsp


Mushroom  - 1 pckt
Garlic - 7-8 cloves
Pepper powder - 1 tsp
Cayenne  Pepper - 1tsp
Sea salt - 1tsp
Olive oil - 1 tsp
Parmesan cheese grated - 2 tbsp 

Cook rice with some vegetable stock instead of plain water. But cooking in water is Ok too, if you don’t have vegetable stock at hand. Add 1/2 tsp spoon of vinegar ( I added red wine vinegar) and 1/2 tbsp of olive oil. Cook this in a pan. 

For Mushroom - cut into slices. Cook in oil n garlic till it leaves all water. Then add all peppers n salt. 

Now in bowl mix cooked rice, mushroom with its water, and grated cheese. 

It’s ready!! Simple n yummmy!!  

Original recipe calls for lots of butter and cheese, you can actually make variations as per your taste and how much you want to indulge!!

This one was really good!!
 In fact later, we tried another variation. 
Same way cooked rice and added sautΓ©d eggs into it!! No cheese at all!! Even that tasted awesome!! 

Or try this same boiled rice with your stir fry!!!
If you are a non veg - have it with fish fry!!
