So, here back again!!! π
Recently, it was friend’s birthday and I thought of baking a cake for her. It was my another first try with the “ eggless” cake.
Though I have been baking for long time, but just kept it restricted to simple tea cakes. Never ventured into the exotic varieties!! (However, always loved gobbling the good home baked cakes wherever I could. ππ)
One of my cousins, who is expert in baking cakes, even with her super busy work schedule - heavenly to eat, and total treat for your eyes - cakes baked by her are divine!! Yummmm!!
Well, a little bit of “ bake your cake” and “eat it too” inspiration came from there too. So, it wasn’t totally kids who pushed me into this, if I had so much “maatratava” in me, I would have surely been crowned “The mother of the year” π.
Anyway, multiple factors, one being lock down - I started this more for the need of bread, pav, buns, and pizza base. That all came out very well, and pat pat on my back for that π₯°ππ.
Then, I thought about cakes!! Each time I baked a cake, and if it came out edible π, never had the patience to decorate it!! After a few rounds, I learnt the trick to make sure that each time, it will come out edible, but still no patience to decorate it. Whenever I tried my hand in decorating, it became a disaster.
So, back to the friends story. For this friends birthday, I thought let me bake and do some basic cream cheese frosting “decor” on it!! Cake came out good - frosting was good too. Somehow managed applying it on cake π and beyond that whatever I tried, it had to be removed. For covering up, one more layer of cream cheese on the top!! Then finally I went to wish her. After quickly wishing her, I handed over the box. It was her special day, and so she offered me the cake baked by her daughter, who is not even a teenager.
After having a bite of it, I looked at my friend - and thought - “Is there a way that I can rewind!! Like I was never here!!!” I wanted to snatch away my box from her n run away!! π€£
( Btw I got those feelings because cake baked by her daughter was so good, ganache was purrfectly set n cake was soft and gooey!! )
Well, mine was soft too, just that, it wasn’t presentable π. Ideally, this should have ended my bake mania - as I guess everyone else is baking superb stuff!!
But then I thought, for me, it’s not for being Purrrfect, it’s more, because I enjoy it!! Remember : “ My Meditation”?
And to save my day, that dear friend came back saying - the cake was good ...little courtesies/gestures from us, sometimes, can be ☀️ sunshine for someone!! And this one was mine!!! π
Later, got to know about another member in family - known to be a mysterious person π, unless you are together - making and baking all exotic breads and buns and cakes!! She had some good tips to share, and I tried them all.....π
Each time something comes out good from your oven- it makes you feel good, happy and satisfied!! π₯°
So, the crush journey continues.....
And then I baked the same eggless recipe, with eggs for us!! Just drizzled it with caramel syrup to give a little twist. And no frosting this time π

Recipe - ( We call it - CoB : Cake or Brownie - as looks like cake and tastes like brownie π)
Maida - 110 gms
Cocoa powder - 35 gms
Granulated sugar - 175 gms
Baking soda - 1 teaspoons
Baking powder - 1/2 teaspoon
Salt - 1/2 teaspoon
Oil - 60 ml ( olive oil or any other)
Egg - 1
Vanilla extract - 1 teaspoons
Sour cream - 120 ml
Boiling water + I tablespoon of caramel syrup - 120 ml
Mix all wet ingredients first, leaving hot water.
Mix all dry ingredients.
Now mix wet and dry together, mix everything properly.
In last step, pour hot boiling water with a tablespoon of caramel syrup into it.
Mix it well. Your batter will be quite runny!! That’s how it should be.
Bake it on 180 for 45 minutes!!
It will come out super soft. Can be eaten like this, or you can add some frosting. I just drizzled some more caramel syrup in the middle!!
